Ingredients:
- Thotakura/Amaranth Leaves - 4 to 5 bunches
- Onion - 1 finely chopped
- Green Chillies - 5 chopped
- Garlic - 6 flakes
- Ginger - 1/2inch finely chopped (optional)
- Red Chillies/Endumirchi - 2(optional)
- Avalu/Mustard seeds - 1tsp
- Jeelakarra/Cumin seeds - 1tsp
- Turmeric powder - 1/2tsp
- Oil - 2tbsp
- Salt to taste
Method:
- Wash Thotakura/Amaranth leaves thoroughly. Chop it finely and keep aside.
- Heat oil in a pan. Add mustard seeds, cumin seeds and red chillies and allow it to splutter.
- Once spluttering starts add green chillies, onions, garlic, ginger, turmeric and fry for 5minutes.
- Add chopped thotakura/amaranth leaves and fry for 5minutes.
- Close the lid and cook until leaves are well cooked.
- Serve hot with rice.
