Corn Kosambari Recipe


Ingredients:
  • Sweet Corn or Normal tender corn - 2cups
  • Fresh grated coconut - 1/2cup
  • Green Chillies - 4 chopped finely
  • Curry leaves - 2sprigs
  • Mustard Seeds - 1tsp
  • Oil - 1tbsp
  • Salt to taste
  • Pomogrante seeds - 2tbsp for garnishing (optional)
  • Fresh Coriander leaves - 1tbsp chopped finely
Method:
  • Boil Sweet Corn in water for 10 minutes, drain water and keep the corn aside.( If it is normal tender corn you need not to boil you can use it directly.)
  • Heat oil in a pan. Add mustard seeds and allow it to splutter.
  • Once spluttering starts add green chillies, curry leaves and fry for 5minutes.
  • Meanwhile mix corn, fresh grated coconut, pomogrante seeds and salt in a bowl.
  • Now add the tempering to this corn and mix well.
  • Finally garnish it with coriander leaves and refrigerate until ready to serve.
