Ingredients:
- Eggs - 4
- Onions - 2 finely chopped lengthwise
- Green Chillies - 2 chopped
- Curry leaves/karvepaaku- 2stems
- Ginger Garlic Paste - 1tbsp
- Red chilli powder - 1 tbsp
- Dhaniya Powder - 1tsp
- Avalu/Mustard seeds- 1tsp
- Jeelakarra/Cumin seeds - 1tsp
- Turmeric powder - 1/2 tsp
- Oil - 4tbsp
- Coriander leaves chopped for garnishing - 2tbsp
- Salt to taste
- Heat oil in a pan. Add cumin seeds and mustard seeds. Allow it to splutter.
- Add green chillies, chopped onions, turmeric powder and fry for 10minutes.
- Add ginger garlic paste and fry for 10minutes or until the onions turn golden brown.
- Add red chilli powder, coriander powder and salt.
- Now beat the eggs into the pan and close the lid and allow it to cook for 10minutes in low flame.
- Now flip it otherside and fry for more 10minutes.
- Finally garnish it with coriander leaves and serve hot.
