Ingredients:
- Brinjals/Vankailu - 250gms
- Onion - 1 cut into cubes
- Garlic - 5 flakes
- Pallilu/Peanuts- 1/2 cup
- Red Chilli powder - 1 tbsp
- Coriander powder - 1 tbsp
- Curry leaves/karvepaaku- 1 stem
- Jeelakarra/Cumin seeds - 2 tsp
- Avalu/Mustard seeds - 1tsp
- Turmeric Powder- - 1/2 tsp
- Coriander leaves for garnishing
- Salt to taste
- Oil - 1/2 Cup
- Heat oil 1 teaspoon oil in a pan. Add jeelakarra (1tsp) and curry leaves. Fry for 5minutes.
- Grind onion cubes, garlic, peanuts, salt, fried jeelakarra & curry leaves, coriander powder, red chilli powder to a fine paste and keep it aside.
- Slit each brinjal lengthwise partially into 4 parts.
- Heat oil in a pan. Add jeelakarra(1tsp), Avalu and allow it to splutter.
- Add brinjals and fry for 15minutes.
- Now add the grinded paste and fry for 10 minutes.
- Add 1 cup of water and allow it to cook for more 15minutes.
- Finally garnish it with coriander leaves and serve hot with rice.
