Gutti Vankaya Kurma Recipe




Ingredients:
  • Brinjals/Vankailu - 250gms
  • Onion - 1 cut into cubes
  • Garlic - 5 flakes
  • Pallilu/Peanuts- 1/2 cup
  • Red Chilli powder - 1 tbsp
  • Coriander powder - 1 tbsp
  • Curry leaves/karvepaaku- 1 stem
  • Jeelakarra/Cumin seeds - 2 tsp
  • Avalu/Mustard seeds - 1tsp
  • Turmeric Powder- - 1/2 tsp
  • Coriander leaves for garnishing
  • Salt to taste
  • Oil - 1/2 Cup 
Preparation:
  •  Heat oil 1 teaspoon oil in a pan. Add jeelakarra (1tsp) and curry leaves. Fry for 5minutes.
  • Grind onion cubes, garlic, peanuts, salt, fried jeelakarra & curry leaves, coriander powder, red chilli powder to a fine paste and keep it aside.
  • Slit each brinjal lengthwise partially  into 4 parts.
Method:
  • Heat oil in a pan. Add jeelakarra(1tsp), Avalu and allow it to splutter.
  • Add  brinjals and fry for 15minutes.
  • Now  add the grinded paste and fry for 10 minutes.
  • Add 1 cup of water and allow it to cook for more 15minutes.
  • Finally garnish it with coriander leaves and serve hot with rice.
