Bendakaya Fry (Okra Fry)



Ingredients:
  • Bendakayalu(Okra) - 250gms chopped
  • Onion - 1 finely chopped
  • Green Chillies - 4 chopped
  • Garlic - 6 flakes
  • Curry Leaves (Karvepaaku) - 1 stem
  • Menthiaaku (Fenugreek Leaves) - 2tbsp
  • Coriander Leaves - 2tbsp
  • Avalu (mustard seeds)- 1tsp
  • Jeelakarra (cumin seeds)-1tsp
  • Senaga (chana dal) pappu - 1tbsp
  • Minapappu (urad dal)- 1tsp
  • Oil - 2tbsp
  • Salt to taste
Method:
  • Heat 1/2tbsp of oil in a pan. Add chopped okra/bendakayalu and fry for 15minutes in a low flame and keep it aside.
  • Take a pan and heat remaining oil. Add avalu, jeelakarra and allow it to splutter. Once spluttering starts add senaga pappu, minapappu and fry for 5minutes.
  • Add green chillies, onions, curry leaves and fry until onion turns golden brown.
  • Now add menthiaaku, coriander leaves and fry for 5minutes.
  • Add fried bendakayalu/okra and fry for 5mintues and add garlic flakes & Salt.
  • Dont close the lid. Cook until okra is well cooked.
  • Garnish it with coriander leaves and serve hot.
