Cauliflower Egg Curry


Ingredients:
  • Cauliflower Florets - 2cups 
  • Eggs - 2 to 3
  • Green Chillies - 3 finely chopped
  • Onion - 1 chopped finely
  • Ginger Garlic paste - 1tbsp
  • Curry leaves - 1stem
  • Avalu/Mustard seeds- 1tsp
  • Jeelakarra/Cumin seeds - 1tsp
  • Pepper powder - 1/2 tsp
  • Oil - 3tbsp
  • Salt to taste 
  • Coriander leaves for garnishing
Method: 
  • Boil Cauliflower florets in hot water with a pinch of salt for 5minutes. Drain water and keep florets aside.
  • Heat oil in a pan. Add mustard seeds and cumin seeds and allow it to splutter.
  • Add green chillies, onions, curry leaves and fry for 5minutes. Add ginger garlic paste and fry till onions turns golden brown.
  • Now add partly boiled cauliflower florets and fry for 10minutes.
  • Now beat the eggs in a bowl and pour over cauliflower florets.
  • Don't mix now, close the pan with lid and allow eggs to cook i.e for 10minutes.
  • Now mix well eggs and florets. Add pepper powder and fry for 5minutes.
  • Garnish it with coriander leaves and serve hot.
