Poni Annam /Telugu Fried Rice


Ingredients:
  • Boiled/Cooked Rice (Left over rice) - 2 cups
  • Eggs - 2 (optional)
  • Onion - 1 cut into lengthwise
  • Green chillies- 2 finely chopped
  • Garlic - 4 flakes chop finely
  • Red chilli powder - 1tsp
  • Coriander/Dhaniya powder - 1tsp
  • Turmeric powder- 1/2tsp
  • Salt to taste
  • Oil-2tbsp
  • Coriander leaves - 2tbsp chop finely
  • Menti/Fenugreek leaves - 2tbsp
  • Curry leaves/karvepaaku - 1 stem
  • Avalu/Mustard seeds - 1/2tsp
  • Jeera/Cumin seeds - 1tsp
  • Minapappu/urad dal - 1tsp
  • Senaga pappu - 1tsp
Method:
  • Heat oil in a pan. Add avalu, jeelakarra/cumin seeds, minapappu and senaga pappu. Fry for 2minutes.
  • Add green chillies, onions, garlic, turmeric powder and fry for till onions turn golden color.
  • Now add curry leaves, coriander leaves, fenugreek leaves and fry for a  minute.
  • Beat the eggs in the pan(this step is optional).
  • Do not mix the eggs right now. Allow it cook for 10 minutes or until they are well cooked.
  • Now mix the eggs well breaking it into pieces.
  • Now add boiled rice, red chilli powder, salt, dhaniya powder and mix everything well and fry for 10 minutes.
  • Garnish it with coriander leaves and lemon wedges, onion and serve hot.
