Vaangi Bath (Brinjal Rice)

Ingredients:
  • Brinjal-Round ones and tender -250 gms
  • Dhania/coriander seeds -2 tsp
  • Methi/menthulu- 1tsp
  • Red chillies-6
  • Bengal gram dhal-itsp
  • Raathi puvvu- i tsp
  • Cinnamon-1 stick
  • Cloves-1-2
  • Oil-4 tbsp
  • Cooked Rice-400 gms
  • Salt to taste

Method:
  • Cut brinjals length wise and keep them aside.
  • Heat oil in a kadai. Add dhania, red chillies, bengal gram, raati puvvu, cinnamon, cloves and methi
  • Roast all of them for few minutes and after they become cool, grind them into fine powder.
  • Now take oil in kadai and add brinjals to it. once brinjals are cooked add the masala powder and salt.
  • Remove from fire. Take cooked rice in a big bowl and add the curry and mix it well. 
  • Serve hot with Raita.
