Ingredients:
- Beerakayalu/Ridge gourd - 2 chopped into small cubes
- Tomato - 1 finely chopped
- Onion - 1 chopped
- Garlic - 4 flakes
- Ginger Garlic paste - 1tsp
- Karvepaaku/curry leaves - 1 stem
- Red Chilli powder - 1tbsp
- Dhaniya(coriander) powder - 1tsp
- Avalu/Mustard seeds - 1tsp
- Jeelakarra/Cumin seeds- 1tsp
- Turmeric powder - 1/2 tsp
- Oil - 3tbsp
- Salt to taste
Method:
- Heat oil in a pan. Add cumin seeds, mustard seeds and allow it to splutter.
- Add curry leaves, onions, garlic and fry for few minutes.
- Now add ginger garlic paste and fry for 5minutes.
- Add ridge gourd/beerakaya mukkalu and fry for 15minutes or until they become tender.
- Once they are 3/4th cooked add tomatoes. red chilli powder, dhaniya powder and fry for 15minutes.
- Now add salt. Finally garnish it with coriander leaves and serve hot with rice.
