Ingredients:
- Eggs - 4
- Onions - 4 chopped
- Tomato - 1 medium finely chopped
- Green Chillies - 4 chopped
- Ginger Garlic paste - 1tbsp
- Red Chilli powder - 1/2 tsp
- Corainder powder - 1 tsp
- Oil - 4tbsp
- Salt to taste
- Coriander leaves chopped finely - 3tbsp
- Curry leaves/karvepaaku - 2stems
- Avalu/mustard seeds - 1tsp
- Jeelakarra/cumin seeds - 1tsp
- Turmeric powder - 1tsp
- Heat oil in a pan. Add cumin seeds, mustard seeds and allow it to splutter.
- Add chopped green chillies, curry leaves and fry.
- Add chopped onions and fry till onion turns golden brown color.
- Add ginger garlic paste, turmeric powder and fry for 5mintues.
- Add chopped tomato and fry till they become soft.
- Now beat eggs in pan. Allow it to cook for 5minutes and dont mix it right now.
- Now mix the eggs well breaking it into small pieces and fry for 10 to 15mintues or until they are cooked.
- Add red chilli powder, salt and coriander powder and fry for 5mintues.
- Finally garnish it with coriander leaves and serve hot.
