Tomato Egg Rice Recipe


Ingredients:
  • Boiled Rice - 1 bowl
  • Tomato  - 1 finely chopped
  • Egg - 1
  • Onion - 1 chopped lengthwise
  • Green Chilli - 1 chopped
  • Curry leaves - 1 stem
  • Avalu/Mustard seeds - 1/2tsp
  • Jeelakarra/Cumin seeds - 1/2tsp
  • Coriander leaves for garnishing - 2tbsp
  • Red Chilli powder - 1tsp
  • Dhaniya/coriander powder - 1/2tsp
  • Turmeric powder - 1/2tsp
  • Oil - 2tbsp
  • Salt to taste

Method:
  • Heat oil in a pan. Add mustard seeds, cumin seeds and allow it to splutter.
  • Add green chillies, curry leaves and onions and fry for 5minutes.
  • Now add chopped tomatoes and fry for 10minutes.
  • Add turmeric, red chilli powder, salt and dhaniya powder.
  • Now beat the egg in the pan and fry for 10minutes.
  • Add cooked rice and fry for 5 to 10minutes.
  • Finally garnish it with coriander leaves and serve hot.
