Ingredients:
- Boiled Rice - 1 bowl
- Tomato - 1 finely chopped
- Egg - 1
- Onion - 1 chopped lengthwise
- Green Chilli - 1 chopped
- Curry leaves - 1 stem
- Avalu/Mustard seeds - 1/2tsp
- Jeelakarra/Cumin seeds - 1/2tsp
- Coriander leaves for garnishing - 2tbsp
- Red Chilli powder - 1tsp
- Dhaniya/coriander powder - 1/2tsp
- Turmeric powder - 1/2tsp
- Oil - 2tbsp
- Salt to taste
Method:
- Heat oil in a pan. Add mustard seeds, cumin seeds and allow it to splutter.
- Add green chillies, curry leaves and onions and fry for 5minutes.
- Now add chopped tomatoes and fry for 10minutes.
- Add turmeric, red chilli powder, salt and dhaniya powder.
- Now beat the egg in the pan and fry for 10minutes.
- Add cooked rice and fry for 5 to 10minutes.
- Finally garnish it with coriander leaves and serve hot.
