Vankaya (Brinjal) Tomato Curry



Ingredients:
  • Vankaylu/Brinjals (green ) - 250gms
  • Tomatoes - 2 or 3 medium finely chopped
  • Green Peas - 2tbsp (optional)
  • Green Chillies - 4 chop into lengthwise
  • Onion - 1 medium chop into lengthwise
  • Karvepaaku/Curry leaves - 2 sprigs
  • Ginger garlic paste - 1tbsp
  • Avalu/mustard seeds - 1tsp
  • Jeelakarra/cumin seeds - 1tsp
  • Turmeric powder - 1/2tsp
  • Dhaniya powder/Coriander powder - 1tsp(optional)
  • Salt to taste
  • Oil - 3 tbsp
 Method:
  • Take water in a bowl. Add little salt in it. Now cut brinjals into 1"inch lengthwise and put it in water.
  • Now heat oil in a pan. Add avalu and jeelakarra and allow it to splutter.
  • Add green chillies, curry leaves and fry for 1minute. 
  • Add onions, turmeric powder and ginger garlic paste and fry until onion turns golden color.
  • Add Green Peas, Tomatoes and fry till tomatoes are well cooked or for 10 minutes.
  • Add chopped brinjals and mix well. Close it with a lid and allow it to cook until brinjals are well cooked.
  • Now remove the lid. Add salt, dhaniya powder and fry for 5minutes.
  • Serve hot with Rice and Pachi pulsu or Coriander pepper rasam or with rotis.
