Dondakaya (Tindoora) Fry

 
What You Need :
  • Dondakaya/Tindoora - 250gms chop finely
  • Carrot - 1 grated
  • Onion - 1 chop finely
  • Karvepaaku/Curry Leaves - 2 sprigs
  • Coriander leaves - 2tbsp for garnishing
  • Garlic - 6 flakes
  • Green Chillies- 2 chop finely
  • Senaga Pappu(Chana dal)- 1tbsp
  • Avalu/mustard seeds - 1/2tsp
  • Jeelakarra/Cumin seeds - 1/2tsp
  • Red Chilli powder - 1tsp
  • Salt to taste
  • Oil - 3tbsp

How to Cook:
  • Heat 1tbsp of oil in a pan. Add Chopped Dondakaya/tindoora and fry for 10minutes and keep aside.
  • In the same pan heat remaining oil. Add cumin seeds, mustard seeds, senaga pappu and allow it to splutter.
  • Once spluttering starts add green chillies, onions, curry leaves, garlic and saute for 5minutes or  till onion turns golden color.
  • Add grated carrot, mix well and fry for 10minutes.
  • Now add dondakaya/tindoora, mix well and fry until the carrot and tindoora is well cooked.
  • Add Red Chilli powder and salt and mix well.
  • Garnish it with coriander leaves and serve hot with rice
