Simple Carrot Fry

Ingredients:
  • Carrots -3 finely chop into small cubes
  • Onion - 1 medium finely chopped
  • Green Chillies - 1 finely chopped
  • Garlic - 5 flakes chopped
  • Curry Leaves/Karveepaku - 2 sprigs
  • Red Chilli powder - 1tsp
  • Coriander/Dhaniya powder - 1tsp
  • Avalu/mustard seeds - 1/2tsp
  • Jeelakarra/cumin seeds - 1/2tsp
  • Turmeric Powder - 1/2tsp
  • Salt to taste
  • Oil - 2tbsp
Method:
  • Heat oil in a pan. Add Avalu, Jeelakarra and allow it to splutter.
  • Add green chillies, curry leaves, garlic and fry for 1minute.
  • Add chopped onions, turmeric powder and fry till onion turns golden color.
  • Now add chopped Carrot cubes and fry till carrots become tender or well cooked.
  • Add Salt, Coriander/Dhaniya powder and red chilli powder and mix well and fry for 5 to 10 minutes.
  • Serve hot with rice.
