Ingredients:
Sending this recipe to Vardhini's Dish it out event hosted by Sangeetha of Spicy Treats- Vankaylu/Brinjals (green ) - 250gms
- Tomatoes - 2 or 3 medium finely chopped
- Green Peas - 2tbsp (optional)
- Green Chillies - 4 chop into lengthwise
- Onion - 1 medium chop into lengthwise
- Karvepaaku/Curry leaves - 2 sprigs
- Ginger garlic paste - 1tbsp
- Avalu/mustard seeds - 1tsp
- Jeelakarra/cumin seeds - 1tsp
- Turmeric powder - 1/2tsp
- Dhaniya powder/Coriander powder - 1tsp(optional)
- Salt to taste
- Oil - 3 tbsp
- Take water in a bowl. Add little salt in it. Now cut brinjals into 1"inch lengthwise and put it in water.
- Now heat oil in a pan. Add avalu and jeelakarra and allow it to splutter.
- Add green chillies, curry leaves and fry for 1minute.
- Add onions, turmeric powder and ginger garlic paste and fry until onion turns golden color.
- Add Green Peas, Tomatoes and fry till tomatoes are well cooked or for 10 minutes.
- Add chopped brinjals and mix well. Close it with a lid and allow it to cook until brinjals are well cooked.
- Now remove the lid. Add salt, dhaniya powder and fry for 5minutes.
- Serve hot with Rice and Pachi pulsu or Coriander pepper rasam or with rotis.
