Gutti Vankaya Kura


This is another version of Gutti Vankaya Kurma..

Ingredients:
  • Brinjals/Vankailu - 250gms
  • Onion - 1
  • Nuvvula Podi - 2tbsp
  • Pallilu/Peanuts powder- 2tbsp 
  • Coconut powder - 2tbsp
  • Red Chilli powder - 1 or 2 tbsp
  • Elachi - 2
  • Lavangalu/Cloves - 3
  • Menthi podi(Roasted Fenugreek powder) - 1/2 tsp
  • Ginger Garlic Paste - 1tsp
  • Tamarind/chintapandu - lemon size soak in water
  • Jaggery(bellam) or sugar - 1/2tsp
  • Curry leaves/karvepaaku- 1 stem
  • Turmeric Powder- - 1/2 tsp
  • Coriander leaves for garnishing
  • Salt to taste
  • Oil - 1/2 Cup 

Method:
  • Heat onion directly on stove. Heat until onion is cooked.
  • Slit each brinjal lengthwise partially  into 4 parts.
  • Grind Nuvvula podi, coconut powder, peanuts powder, onion, elachi, lavangalu, menthi podi, chintapandu, sugar, ginger garlic paste, red chilli powder to a fine paste. Add water if required.
  • Now heat oil in a pan. Add curry leaves and brinjals and fry for 15mintues.
  • Add the above grinded paste,turmeric powder and salt and mix well.
  • Close the lid and cook for 15 minutes.
  • Now add little water for gravy and cook for more 10minutes or until the brinjals are well cooked.
  • Garnish it with coriander leaves and serve hot with rice.
